Oysters On Bruschette


24 medium-size shrimp* OR 24 medium-size oysters
Blue cheese (or cheese of your choice)
24 slices of thin-sliced smoked bacon
French bread

Nina's Tip
Nina’s Tip: *Shrimp should always be fresh! But if you can only get frozen shrimp, be sure to cook the shrimp before you add it to your pot. Frozen shrimp are imported and pumped up with water to look nice. The water pumped into the shrimp will ruin your meal. So, cook the shrimp separately, then add it to your dish.

Shrimp On Bruschette on a cooking rack before it's been broiled


Cut the French bread into thin slices and brown in the oven at for 350 degrees for 2 minutes ONLY. Then, set aside.

 Cut the bacon in half. Take out the shrimp or oysters, add a small amount of cheese (I use blue cheese, but you can use whatever cheese you like). With the shrimp or oyster in your hand, firmly squeeze the cheese, then wrap the bacon firmly around shrimp or oyster.

Nina's Shrimp On Bruschette

Place on a wire rack with a baking sheet underneath. Pre-heat the oven to low broil at 425 degrees and broil for 5 minutes. Then, turn and broil the other side for 1 to 2 minutes, until brown.

Place the cooked shrimp or oyster, cheese and bacon combination on toast and enjoy!
