Cherries Jubilee

3 bowls of Nina's Cherries Jubilee with ice cream and a pint of Blue Bell Ice Cream

This is a great Summer dessert!

INGREDIENTS

3 cups seedless Bing cherries
1 1/2 cups water
1 cup sugar
1 lemon
2 teaspoons corn starch
3 tablespoons coconut rum

A bowl of Bing cherries

INSTRUCTIONS

Add water and corn starch to a small saucepan, mix with a wire whisk and simmer.

 Add sugar and bring to a low boil. Add lemon juice, rum and simmer uncovered for 30 minutes.

Pour over vanilla ice cream. I like scoops of Blue Bell ice cream. Mmmmm, mmm, good!
