3 or 4 soft shell crabs
1 cup milk
1 cup flour
To prepare the soft crab for frying, turn the crab upside down and gently open the back flap. You may need a pair of scissors. When the flap is open, remove all soft tissue – all the gross stuff. When the crab is cleaned inside return flap. You are ready for frying.
I use peanut oil and preheat to 350 degrees. You will need 2 bowls and 2 plates. 1 bowl for 1 cup flour and 1 cup bread crumbs. Another bowl with 2 eggs and 1 cup milk.
Place the crab in the egg and milk and wash completely cover the crab, then place the crab in the flour mixture. Place on a plate until all crabs are ready.
When ready to fry, place the belly down and fry for about 3 to 4 minutes. Then flip the crab and fry 3 more minutes. Drain on paper towel. And enjoy!
