This recipe is an old New Orleans favorite. Grandma would make this when she had old bananas that were ready to be thrown away.
3 or 4 ripe bananas
1 1/2 cups all-purpose flour
1 cup sugar
4 tablespoons butter
1 teaspoon baking soda
1 teaspoon vanilla
1 cup chopped pecans or walnuts
No need for mixer with this recipe. Preheat the oven to 350 degrees. Add flour, sugar, baking soda, salt mix together. Add egg, butter, vanilla. Add mashed bananas and pecans. Prepare 4×8 loaf pan with 1 tablespoon of soft butter on bottom and sides. Add mixture and bake for 60 minutes.
