Big Easy Pecan Pie

A fresh baked Big Easy Pecan Pie

In the Big Easy, we love our Pecan Pie! My niece, Annette, adds 1 cup of toasted coconut flakes and 3/4 cup of chocolate chips. Really good!


1/2 cup butter
1 cup sugar
1 cup light corn syrup
4 large eggs, beaten
1 teaspoon vanilla
1 tablespoon flour
1/2 teaspoon salt
1 9-inch pastry shell
1 1/2 cups pecan halves


Combine the butter, sugar and corn syrup in medium sauce pan and cook over low heat. Stir constantly. Add flour. When the sugar is dissolved, set to the side and let cool. Add the eggs, vanilla and salt and mix. When sugar mixture is cool, add the egg mixture and blend pecans. Mix well and pour into an unbaked pie shell. Bake at 325 degrees for 50-60 minutes. Let cool, slice and eat! Even better serve with ice cream! I like to serve Blue Bell Ice Cream, which you can get HERE.
