Giuseppe’s Oyster Pasta

10 minutes to prepare and very easy!


16 ounces of fresh oysters
1 bunch fresh parsley
6 tablespoons minced garlic
4 ounces of olive oil
4 ounces of parmesan Cheese
1 pack of angel hair pasta

Boil pasta as directed, drain and set to the side. Drain oysters and save liquid. In a separate pan add parsley, butter and sauté for about 5 minutes. Add garlic and oysters. Sauté 5-10 mins until you get your desired texture of the oyster. Just depends on the size. Do not over cook oysters. When done, add parmesan cheese, olive oil heat and add pasta. You can also add about 3-4 ounces of the oyster water if you’d like. Let it set for about 10 minutes. The pasta will soak up the flavor. Top with a little parmesan cheese when ready to eat.
