Grilled Red Fish with Lil Partial Potatoes

We use Red Fish here in New Orleans and Louisiana, but you can use any thick-skinned fish for this meal!

INGREDIENTS AND INSTRUCTIONS FOR FISH:

Leave the scales on, this will help keep the fish intact. Remove the head and bones.

 Place on outdoor grill on medium heat. Sprinkle with SOLA Seasoning. (Get some SOLA Seasoning HERE!)

Baste with Special Fish Sauce (find the Special Fish Sauce ingredients and instructions below). Grill for 10 minutes, basting fish 2 or 3 times.

INGREDIENTS FOR SPECIAL FISH SAUCE:

1 fresh lemon
1/2 stick butter
1/2 cup Wishbone Italian Dressing (Need some Wishbone? Get it HERE!)
1/2 cup Parmesan cheese
2 tablespoon minced garlic
SOLA Cajun Seasoning

INSTRUCTIONS FOR SPECIAL FISH SAUCE:

Combine all ingredients and place in microwave for 4 mins. Spread on fish with a brush. Apply About 3 times.

INGREDIENTS FOR LIL PARTIAL POTATOES:

3 pounds small honey gold potatoes
1 tablespoon Zatarain’s Crab Boil (Get some Zatarain’s right HERE!)
1 tablespoon salt
1/2 stick butter
1/2 cup Italian dressing
1 tablespoon garlic powder

INSTRUCTIONS FOR LIL PARTIAL POTATOES:

In large pot add water, Zatarain’s Crab Boil and salt. Bring to boil. Add potatoes. Check after 15 minutes. Continue boiling potatoes until you can stick a fork through the center. Drain. In the same pot combine butter, Italian dressing and garlic powder. Simmer for 5 minutes. Cut the potatoes in half and cook in the Special Fish Sauce for 5-10 minutes or until creamy but still whole.

Lil Partial Potatoes ready to eat

Serve all together. Delicious!
