Pralines are a traditional New Orleans candy, which are delicious!
INGREDIENTS
1 1/2 cups sugar
3/4 cups brown sugar
1/2 cup heavy whipping cream
6 tablespoons butter
1 teaspoon vanilla
1 1/2 cups chopped pecans
Parchment paper or aluminum foil
INSTRUCTIONS
Mix all the ingredients in a sauce pan. Stir constantly for 4 to 5 minutes. The mixture will be bubbly and start to turn color and have a creamy butter texture. This recipe moves really fast so the texture will change quickly. When it’s ready, spoon cookie-size portions onto parchment paper or aluminum foil. Let cool and eat.
I like to make my pralines in an electric skillet that has thermostat control on it set to 350 degrees. It eliminates a candy thermometer.
