New Orleans Pralines

A plate of pralines with a Nina's Kitchen sign behind it

Pralines are a traditional New Orleans candy, which are delicious!

Stirring the pralines

1 1/2 cups sugar
3/4 cups brown sugar
1/2 cup heavy whipping cream
6 tablespoons butter
1 teaspoon vanilla
1 1/2 cups chopped pecans
Parchment paper or aluminum foil

Add pecans to sauceMix all the ingredients in a sauce pan. Stir constantly for 4 to 5 minutes. The mixture will be bubbly and start to turn color and have a creamy butter texture. This recipe moves really fast so the texture will change quickly. When it’s ready, spoon cookie-size portions onto parchment paper or aluminum foil. Let cool and eat.

Nina's TipI like to make my pralines in an electric skillet that has thermostat control on it set to 350 degrees. It eliminates a candy thermometer.
